This coffee comes from Yirgacheffe, Ethiopia, where smallholder farmers hand-sort cherries at peak ripeness. Processed through a nitrogen natural method, the cherries are sealed in tanks filled with nitrogen, pushing out oxygen and creating a controlled fermentation environment. Cherries are then dried on raised beds in thick stacks for 25 to 30 days until moisture stabilizes.
In the cup, expect an intense fruit-forward profile with floral complexity and a clean, structured body.
